Lentil Meatloaf


Ingredients

2 cups cooked Lentils (red or orange will look more like meat)

1 cup sunflower seeds ground to a powder

1/2 cup cooked rice (white or brown)

1/2 cup bread crumbs

1 cup stewed tomatoes

1 tsp. salt

1/4 tsp. sage

1 Tbls. chicken style seasoning (can use the veggie one) like powdered oxo

or bovero

1 medium onion chopped very fine

1 cup celery chopped very fine

1 can tomato paste

Directions

Mix all ingredients (I add a bit of garlic to the mix) and bake in a greased loaf pan for one hour at 350 degrees.

To give it more of the illusion of meat I glaze the top of it with a combination of

1/4 cup dark brown sugar

1/2 cup tomato ketchup

1 Tbls.. Dijon mustard

when glazing leave a trough around the meatloaf and put a trough down the center to allow the glaze someplace to run...
